Across the Mediterranean, from Spain to Morocco, via Italy, Sicily, Greece and Lebanon, one delicious food influence gives way to the next. The whole region is a rich seam of deeply delicious food, and the recipes in this mouth-watering collection are gathered far and wide from anywhere the Mediterranean Sea touches the shore.

These are dishes inspired by the Mediterranean classics, by how locals eat or by single ingredients – think olive oil, the perfumed zest of lemons and oranges, fresh herbs, ripe seasonal tomatoes, juicy stone fruits, oozy figs, sizzling garlic, crushed, aromatic spices, smoky grilled meats and plenty of flatbreads to mop up the juices.

Ben will be cooking a three course feast from the book with a welcome drink from Charles Heidsieck Champagne and a signed Mediterra cookbook to take home with you.

@robin.gill.food is taking control of the #DoughDiaries this month and what a pizza it is!

As Robin says, it is named after the fierce and wonderful women of Napoli who run the city. A tomato base pizza with fennel seed salami, Fiarelli, ricotta, chilli oil and finished with shaved pecorino and capers. The fennel seed sausage salami is made from scratch in our kitchens.

The key ingredient of the pizza is a traditional preserve called Friarelli. This is a nettle type leaf, which is cooked in oil, garlic and chilli and is made mostly by the women running the farms and households in Campania, Italy!
