Sweet grilled peaches, rosemary and pork are a classic late-summer pairing. Fresh chilli gives the greens a bright, lively heat.

DISH WITH TISH: GRILLED PORK CHOPS WITH STICKY PEACHES, ROSEMARY & RAINBOW CHARD

Ingredients

4 thick-cut bone-in pork chops
3 ripe peaches, halved and stoned
2 tbsp olive oil
2 tbsp honey
1 tbsp Dijon mustard
2 rosemary sprigs, leaves finely chopped and 4 whole sprigs for garnish
2 garlic cloves, grated
2 bunches rainbow chard
1 fresh red chilli, finely sliced
25g butter
Sea salt and black pepper


Directions

  1. Mix the honey, mustard, rosemary, garlic and 1 tbsp olive oil.
  2. Rub over the pork chops and season.
    Grill or barbecue the chops for 4–5 minutes per side until cooked through. Rest.
  3. Grill the peaches until caramelised and sticky.
  4. Cook the chard stems in the butter and remaining olive oil for 3–4 minutes. Add the chilli, then the leaves, and cook until wilted.
  5. Serve the chops over the chard with the peaches and resting juices and a sprig of rosemary
