At Cubitt House we consider our supplier choice one of the most important things we do. We take the quality of what we choose in our kitchens very, very seriously working with suppliers we know and trust and who embody our ethos of seasonality being at the heart of everything we do. Suppliers who farm and fish sustainably often using a mixture of traditional methods (handed down via generations) but also leading edge innovation and always following best practice directives where relevant.

Direct Seafoods is an example of a company who believe in these principles whole heartedly, believing that sourcing fish and seafood responsibly is paramount to their business. They will always promote the most sustainable seafood available and work with various organisations to develop sustainable products. Based in South East London; Direct Seafoods supply our chefs with the freshest, locally sourced fish and seafood available in the UK and beyond each day.

In order to find out a bit more about the company we caught up with Mike Kirrage to ask him a few questions.

What is your role in the company and can you tell us a little about what you do?

In my role as Business Development Manager I am always looking for new business opportunities as well as  is work closely with the accounts that I already have, like Cubitt house.  I work closely with all chefs at the pubs making sure that we always supply you the best quality and sustainable fish at the right price.

We take great pride in the quality of our produce at Cubitt House ensuring we use only the very best and always super seasonal. Can you explain how Direct Seafood embodies this idea?

As a business we are passionate about making sure that we are providing best quality fish that is sustainable and responsibly sourced. The majority of all our day boat fish comes directly from Brixham Market where we can trace back to the boat that the fish was caught on. Out Site is Annually audited  giving Cubitt House the confidence that we have all the correct controls and measures in place. We do also supply farmed fish from farms with highest levels of certification. We deal directly with the Farms like Wester Ross Salmon from Scotland, Chalk Stream Trout from Romsey, Hampshire and Bass and Gilt Head Bream from Turkey.

Give us an idea of the range of fish and seafood you provide Cubitt House across our pubs?

The list is pretty extensive!

Firstly there’s the fantastic Lemon Sole, Monkfish, Plaice, Hake, Brill and fersh squid which all come from day boats out of Brixham in Cornwall. Our farmed Bass and Bream directly from the Farms in Turkey as well as farmed Halibut. Wild Halibut is red rated which means it is very unsustainable so we will not sell it). Clams come from Dorset, Salmon from Wester Ross Salmon Farm in the Northwest Highlands of Scotland and Chalk Stream Trout farmed in New Romsey, Hampshire. Mackerel is currently is from the south coast, however when the new quotas start then this will be from Scotland where the fish are bigger and cheaper. A selection of Prawns which come from either Argentina for the Red Prawns of from India or Vietnam for peeled and deveined prawns.
