When it comes to spritzes, Double Dutch are the quiet heroes behind the bar. From G&Ts to Ginger Beer, they’re the ones ensuring that mixers are the life and soul of the party – no matter the spirit they’re paired with.
We’ve partnered closely with Double Dutch to bring you exceptional drinks with bold, unique flavours. To mark our ongoing partnership, we sat down with Raissa de Haas, one half of the sister duo behind Double Dutch, to discuss sustainability, spritzes, and everything in between.
Take us back to the beginning – how was Double Dutch born?
My sister and I always loved a good party and quality drinks. Growing up in the Netherlands, we knew lots of local distillers, but from the start, we thought that the choice of mixers just felt a bit bland. Spirits were becoming more and more premium and more flavourful, but mixers weren’t really innovating in flavour.
We began experimenting by making our own sodas in our kitchen and bringing them to house parties. Then, when we moved to London to study, I wrote my dissertation on the fact that gin was massively booming, but mixers weren’t growing alongside it, which didn’t make sense for two complementary products. My thesis won best dissertation of the year, which helped us secure some initial prize money as investment, and from there, we launched Double Dutch in London.
If you had to pick just one, which Double Dutch mixer are you reaching for and why?
It has to be Cucumber & Watermelon. It’s fresh, light and super summery – one of those flavours that is just super super versatile – it works just as beautifully in a G&T as it does with a white rum or even with a limoncello or on its own just over ice.
What inspired you to launch the Female Bartending Scholarship, and why was it important to you?
Along our journey, we’ve had incredible support from a few people who truly believed in us. We wouldn’t be where we are today without those moments (and people) where someone gave us a push, opened a door or introduced us to the right people.
Hospitality is all about people and networks, and we wanted to give that same support back. The Female Bartending Scholarship is about creating opportunity, confidence and access, and helping women build some of the skills as well as networks that are so crucial in this industry.
Sustainability is a big part of Double Dutch. How do you approach it day to day?
We’re B Corp and carbon neutral as a company. We focus on understanding our footprint, which means looking at everything from ingredients and packaging to volumes and logistics. Then from there onwards, we look at where we can reduce and improve. Once we’ve reduced where possible, we offset what remains. For us, sustainability is about reduction first, then offsetting, and doing it transparently. It’s an ongoing process rather than a finished goal. Being B Corp has definitely helped us here to put more and stronger processes in place.
Has your mission shifted as the brand has grown, or has it stayed the same?
Our mission has stayed the same – to make great mixers that pair well with spirits. What’s changed is the scale of our impact. As we’ve grown, we’ve been able to invest more in sustainability, community and education, while staying true to flavour and quality.
What’s the creative process behind your flavour combinations?
We think about flavour very intentionally. We often work with naturally sweeter fruits – like watermelon or pomegranate – so we don’t need to rely on added sugar. All the fruits used are very ripe, which gives natural sweetness and depth without over-sweetening.
From there, we look at food and drink trends, travel inspiration and, most importantly, the spirit the mixer will be paired with. We always work backwards from the final serve and ask: Does this elevate the drink? If it doesn’t, we keep refining.
Who’s behind the scenes bringing Double Dutch to life?
We have a small but great team from finance and operations to sales and marketing. We work closely with bartenders, partners and producers as well as many freelancers and agencies, so in many ways the wider hospitality community is part of the Double Dutch team too.
Do you have a favourite Cubitt House serve using Double Dutch mixers?
A classic G&T with Double Dutch Indian Tonic, plenty of ice and a simple citrus garnish. Letting quality ingredients speak for themselves feels very Cubitt House – understated, elegant and delicious. I love Marylebone, and so probably my favourite house is the Grazing Goat. I love the setting; there’s always a great atmosphere, and I have stayed in the rooms once, which was beautiful as well.
As moderation and sobriety become more popular, how does Double Dutch fit into modern drinking culture?
We’ve always believed great flavour shouldn’t depend on alcohol. Our mixers are designed to shine in low-and no-alcohol serves, whether that’s a mindful midweek drink or a sophisticated non-alcoholic option at the bar. Modern drinking is about choice – and we love being part of that shift.
If you could share just one Double Dutch recipe, what would it be – and why?
Spiced Amaretto Spritz. Double Dutch Ginger beer, 35ml of Amaretto, lots of ice and a lemon twist garnish. It’s effortless, super winter-warming and proof that a simple serve can still feel a little special.
Gin or rum – what’s your choice of spirit and why?
Gin because it is so versatile. However, I love a spiced rum – especially in winter – delicious with Ginger Beer or even with our Cranberry & Ginger. 50ml spiced rum, top up with Cranberry & Ginger tonic and garnish with an orange slice. To add a bit of extra depth, you can add a star anise and 2 dashes of Angostura bitters if you want.
The World Cup is just around the corner. What celebratory drink are you reaching for as the whistle blows?
A crisp Paloma– fast, refreshing and tequila is always a great idea!
What are your predictions for the Summer Spritz of 2026?
Lighter, drier and more botanical, with a strong low-alcohol or alcohol-free twist.
What Double Dutch gift are you giving the hardest-to-please friend, and why?
Different Double Dutch flavours paired with a few bottles of spirits: a gin, a tequila, maybe a vodka. It gives them total freedom to try things out and discover what they actually love, without committing to just one option. Nobody says no to that.
Quinine – yes or no?
Yes – in balance. It’s all about elegance, not bitterness for bitterness’ sake.
